Is there an easy way to choose to boot from USB? I had to edit by hand the GRUB entry and change (${boothd},gpt2) for (hd0,gpt1) and it worked, but I was hoping for something less tinkery.

Press the Delete key over and over while booting up the machine. That will cause the machine to boot into bios mode so that you can change the boot order of the devices.

I set USB as my first device and then set the NVME as my second device. Whenever there is a bootable USB attached, the Cube boots from it. Otherwise it boots from the NVME on the motherboard.

You can actually access the boot item selection by repeatedly pressing the F11 key at boot time.
